Yield 1 loaf
This name just really gets me. It's sort of the perfect name for a bread. This one's a soda bread, meaning that it does not require yeast to rise. It also has no added sugar, so it ends up tasting more like a biscuit filled with dried fruit and crunch from the granola. While this was not the family favorite, it was mine by far.
3 cups unbleached, all-purpose flour or self-rising flour
1 cup granola (fruit and nut + oats)
1 tsp salt
1 tsp baking soda
1 Tbsp unsalted butter, at room temperature
1 1/2 cups buttermilk
Once baked, allow to sit for ten minutes in the pan, then slide a knife around the outside to loosen and invert onto a wire rack to cool.
To serve, slice, toast and slather some sweet butter all over!
