One of the hottest new food trends, cauliflower rice is fantastic because it can serve as a substitute for rice in any dish! It also absorbs flavor better, can be healthier and is a great way to get kids -and picky adults- into eating their veggies.
All you’ll need is a large, sharp chef’s knife, a decent blender or a food processor. If you want to get obscure and even more fancy, use a mezzaluna!
Begin by cutting cauliflower into smaller bits. You can use leftover florets, too.
Next, work in batches so as not to overcrowd your food processor, blender or cutting board.
Pulse, process or chop cauliflower until it resembles rice. It won’t look exactly like rice, but as long as the pieces are the size of grains of rice you’re in the right ball park.
Steam, saute or add to soups. Even cook in a rice cooker!0
