Despite Virginia’s crazy rainy weather lately, we managed to find a nice night in there somewhere to have a BBQ. As soon as the skies cleared, we literally ran outside and had our favorite cookout foods, paired with delicious grilled chicken and, of course, some unseasonably ripe (Mexican?) watermelon.
It looked so good I just had to grab my camera and snap some photos!
Devilishly delicious! This deviled egg mash up got mixed together and went into the delicate hard-boiled figurative shells. Complete with diced cornichons, spicy pepper hoagie spread, smoked sea salt, paprika, curry powder, apple cider vinegar and a touch of sugar. Oh, and don’t forget the mayo! Mix all of that together with the silky yolks from our hens’ eggs and we had a winning combo that was a huge hit with our growing boys.
Next up, a salad medley. Colin made these and he is literally the best cook I know. He whipped them up in no time and they were so fresh, crunchy, crispy and surprisingly different! Here’s his green bean+corn+olive+basil salad –>
While I am partial to the green bean salad (a recipe that I borrowed from him here from a meal plan I did for RelayFoods), I’ve got to say that the cucumber+sesame+pickled red onion+jicama salad really hit the spot!
When the food is this beautiful and tasty, I just can’t get enough of it and usually someone has to pry me away from my camera to actually sit down and eat.
The best part about these salads? They can hang out in the fridge for up to a week, and they just taste better and better.
Finally, what cookout isn’t complete without a nice, juicy watermelon for dessert?
