Well, this one took me no time to dream up and execute. After all, how could I go wrong with a fridge & pantry full of kielbasa sausage, bell peppers, onions, potatoes and local sauerkraut and even more local beer?
What’s nice about this dish is that all of the ingredients are layered. You can eat what you want individually or combine everything on a plate (or in a bowl) atop wild rice or quinoa. This is not only the perfect cold-weather food, but the best snowy day food. It braises in the oven, which leaves plenty of time for outdoor snow play and allows everyone to come in from the cold and sit down to this warm, comforting meal.
That’s my kind of perfect dish if ever there was one.
